Ingredients
  

2 boneless, skinless chicken breasts

1 cup fresh spinach, roughly chopped

1 cup mushrooms, sliced (button or cremini work well)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.

    Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.

        Cook the Mushrooms: Add the sliced mushrooms to the skillet. Cook for another 5 minutes, or until the mushrooms are browned and have released their moisture.

          Combine with Cream: Pour in the chicken broth and bring to a simmer. Then, stir in the heavy cream and Parmesan cheese, mixing until the cheese has melted and the sauce is creamy.

            Add Spinach: Fold in the chopped spinach, allowing it to wilt into the creamy mixture for about 2 minutes.

              Return Chicken to Skillet: Place the seared chicken back into the skillet, spooning the sauce over the top. Let it cook together for another 2 minutes to heat through.
