Creamy Spinach and Sun-Dried Tomato Pasta

8 oz (225g) pasta of choice (fettuccine, penne, or spaghetti)

2 tablespoons olive oil

2 cloves garlic, minced

4 cups fresh spinach, chopped

1 cup sun-dried tomatoes, chopped (preferably in oil)

1 cup heavy cream

1/2 cup grated Parmesan cheese (plus more for serving)

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional, for spice)

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once heated, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Spinach and Tomatoes: Stir in the chopped spinach and sun-dried tomatoes. Cook for 3-4 minutes until the spinach wilts down.

        Make it Creamy: Reduce the heat to low and pour in the heavy cream. Stir to combine, allowing the cream to heat up without boiling.

          Add Cheese and Seasoning: Add the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until the cheese melts and the sauce is smooth. If the sauce is too thick, gradually add in some reserved pasta water until you reach the desired consistency.

            Combine with Pasta: Add the cooked pasta to the skillet, tossing to coat the pasta evenly in the creamy sauce. Season with salt and pepper to taste.

              Serve: Divide the pasta into serving bowls. Garnish with additional Parmesan cheese and fresh basil leaves before serving.
