Creamy Spinach Artichoke Pasta

8 oz (225g) pasta of choice (fusilli or penne work well)

1 cup frozen artichoke hearts, thawed and roughly chopped

2 cups fresh spinach leaves, packed

1 cup heavy cream

½ cup grated Parmesan cheese

½ cup cream cheese, softened

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon red pepper flakes (optional, for heat)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Artichokes and Spinach: Stir in the chopped artichoke hearts, cooking for another 2-3 minutes until warmed through. Then add the fresh spinach and cook until wilted, about 2 minutes.

        Create the Sauce: Lower the heat and stir in the heavy cream, cream cheese, Parmesan cheese, onion powder, and red pepper flakes (if using). Stir until the cheeses are melted and everything is well combined, forming a creamy sauce.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat the pasta evenly with the creamy spinach-artichoke sauce. If the sauce is too thick, gradually add reserved pasta water until achieving the desired consistency.

            Season and Serve: Season with salt and black pepper to taste. Remove from heat and serve immediately, garnished with freshly chopped parsley.
