Creamy Spinach Feta Pasta

8 oz (225g) pasta of your choice (penne or fusilli works well)

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

5 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup crumbled feta cheese

½ cup grated Parmesan cheese

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

Salt and pepper to taste

Pinch of red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Spinach: Gradually add the fresh spinach to the skillet, stirring until wilted. This should take about 2-3 minutes.

        Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the crumbled feta cheese and grated Parmesan. Mix until the cheeses have melted and the sauce is creamy.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy spinach and feta sauce. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

            Seasoning: Stir in the lemon zest, lemon juice, and season with salt and pepper to taste. If you like some heat, add a pinch of red pepper flakes.

              Garnish and Serve: Remove from heat, and garnish the pasta with fresh parsley. Serve hot, or enjoy it warm for leftovers!
