Creamy Spinach & Mushroom Pasta

300g pasta (fettuccine or your choice)

2 tablespoons olive oil

2 cloves garlic, minced

250g fresh mushrooms, sliced (cremini or button)

150g fresh spinach, washed and roughly chopped

1 cup heavy cream

½ cup grated Parmesan cheese

½ teaspoon nutmeg

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta cooking water, then drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add the Mushrooms: Incorporate the sliced mushrooms into the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their juices.

        Incorporate Spinach: Add the chopped spinach to the skillet, cooking for an additional 2-3 minutes until wilted.

          Make the Cream Sauce: Pour the heavy cream into the skillet, stirring to combine. Lower the heat and let the mixture simmer for about 2-3 minutes. Stir in the Parmesan cheese until melted and smooth.

            Season: Add the nutmeg, and season with salt and pepper to taste. If the sauce is too thick, gradually add a little reserved pasta water until the desired consistency is reached.

              Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing well to coat the pasta evenly with the creamy sauce. Cook for another minute or two until heated through.

                Serve: Plate the creamy spinach and mushroom pasta, garnishing with freshly chopped parsley. Enjoy while hot!
