Ingredients

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 (9-ounce) package refrigerated cheese tortellini

2 cups fresh spinach, chopped

1 cup heavy cream

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

Freshly grated Parmesan cheese, for serving

Optional: Crusty bread for dipping

Instructions

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add Broth and Tortellini: Pour in the vegetable broth and bring to a simmer. Add the refrigerated cheese tortellini, and cook according to the package instructions, usually about 3-5 minutes.

Incorporate Spinach and Cream: Once the tortellini is cooked, reduce the heat to low. Stir in the chopped spinach and let it wilt for about 1-2 minutes. Then, add the heavy cream, dried basil, and oregano, stirring to combine. Season with salt and pepper to taste.

Simmer and Serve: Allow the soup to simmer gently for another 3-5 minutes, allowing the flavors to meld together. Adjust the seasoning if necessary.

Garnish: Ladle the soup into bowls and sprinkle with freshly grated Parmesan cheese. Serve hot with a side of crusty bread for dipping if desired.
