Creamy Sun-Dried Tomato Orzo

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped (packed in oil for best flavor)

1/2 teaspoon red pepper flakes (optional, for heat)

1 1/2 cups vegetable broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

2 cups fresh spinach

Fresh basil, for garnish

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
