12 oz pasta (fettuccine or penne works well)

1 cup sun-dried tomatoes (in oil, roughly chopped)

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic (minced)

1 small onion (finely chopped)

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper (to taste)

Fresh basil (for garnish)

Extra Parmesan (for serving)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Incorporate Sun-Dried Tomatoes: Add the chopped sun-dried tomatoes to the skillet, and stir them well into the onion and garlic mixture. Cook for about 2-3 minutes to allow the flavors to meld.

        Create the Sauce: Lower the heat to medium-low, then pour in the heavy cream. Stir in the grated Parmesan cheese, dried basil, and dried oregano. Mix until the cheese has melted and the sauce becomes creamy. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
