Ingredients

4 cups fresh sweet corn kernels (can substitute with frozen)

1 medium onion, diced

2 cloves garlic, minced

2 medium russet potatoes, peeled and diced

4 cups vegetable broth (or chicken broth)

1 cup heavy cream (or coconut cream for a vegan option)

2 tbsp olive oil or butter

1 tsp smoked paprika

1/2 tsp ground black pepper

1/2 tsp salt (to taste)

1 cup chopped fresh chives (for garnish)

1 lime, juiced (optional for a refreshing twist)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional minute until fragrant.

Add Potatoes and Broth: Toss in the diced potatoes and corn kernels, mixing well. Pour in the vegetable broth, ensuring it covers the ingredients. Bring to a gentle boil, then reduce the heat to a simmer. Cook for about 15-20 minutes, or until the potatoes are tender.

Blend the Chowder: Using an immersion blender, carefully blend about half of the soup mixture directly in the pot to achieve a creamy texture while keeping some whole corn and potato pieces for added texture. If an immersion blender is not available, transfer half of the mixture to a standard blender, blend until smooth, and return it to the pot.

Incorporate Cream and Seasoning: Stir in the heavy cream, smoked paprika, black pepper, and salt. Let the chowder cook on low heat for another 5-10 minutes to heat through and meld the flavors.

Finishing Touches: At this point, if you desire a zesty kick, squeeze in some lime juice. Adjust seasoning with additional salt or pepper, if needed.

Serve: Ladle the chowder into bowls and garnish with a generous handful of chopped chives. For an extra touch, you can add a sprinkle of smoked paprika on top.

Enjoy: Serve warm with crusty bread or a light salad for a complete meal!
