4 medium sweet potatoes (about 2 lbs)

1/4 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup milk (whole or almond)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 large eggs, beaten

1/2 cup mini marshmallows (optional)

1/2 cup pecans, chopped (for topping)

1/4 cup flour (for topping)

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the sweet potatoes: Peel and chop the sweet potatoes into chunks. Place them in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes, or until fork-tender. Drain and let cool slightly.

      Mash the sweet potatoes: In a large mixing bowl, add the cooked sweet potatoes. Use a potato masher or a hand mixer to mash them until smooth and creamy.

        Mix the ingredients: To the mashed sweet potatoes, add softened butter, brown sugar, milk, vanilla extract, cinnamon, nutmeg, salt, and beaten eggs. Mix well until everything is combined and the mixture is smooth.

          Transfer to a baking dish: Pour the sweet potato mixture into a greased 9x13-inch baking dish, spreading it evenly.

            Prepare the topping: In a small bowl, mix chopped pecans, flour, and remaining brown sugar together. If you want to use marshmallows, you can sprinkle them on top of the sweet potato mixture before adding the pecan topping or reserve them to add for the last 10 minutes of baking.

              Assemble the casserole: Evenly distribute the pecan mixture over the sweet potato layer in the baking dish.
