Creamy Taco Pasta with Ground Turkey

8 ounces of rotini pasta

1 pound ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 packet taco seasoning (about 1 ounce)

1 can (15 ounces) diced tomatoes with green chilies, undrained

1 cup chicken broth

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup frozen corn (optional)

Salt and pepper, to taste

Fresh cilantro, for garnish

Optional toppings: sliced jalapeños, sour cream, and avocado

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until softened. Then, add the minced garlic and cook for an additional 1 minute until fragrant.

      Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes, or until browned and fully cooked through. Drain any excess fat if necessary.

        Season & Simmer: Sprinkle the taco seasoning over the cooked turkey, mixing well to coat. Pour in the diced tomatoes (with their juices) and the chicken broth. Stir to combine and let it simmer for about 5 minutes.

          Make it Creamy: Reduce the heat to low and add the softened cream cheese to the skillet. Stir until completely melted and combined. If using, add the frozen corn at this stage for a delightful pop of sweetness.

            Combine Pasta & Sauce: Add the cooked rotini pasta to the skillet, tossing well to combine. Gradually stir in the shredded cheddar cheese until melted and the pasta is coated in the creamy sauce.

              Season to Taste: Taste and adjust seasonings with salt and pepper as desired.

                Serve: Remove from heat, garnish with fresh cilantro, and serve hot. Add any optional toppings like sliced jalapeños, sour cream, or avocado for extra flavor!
