4 boneless, skinless chicken breasts

1 cup jasmine rice

1 can (14 oz) diced tomatoes, undrained

1 cup chicken broth

1 cup heavy cream

1 tablespoon olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

1/2 cup fresh basil, chopped (for garnish)

Grated Parmesan cheese, for serving

Preparation of the Chicken: Season the chicken breasts with salt, pepper, and the dried basil. In a large skillet over medium heat, add the olive oil. Once hot, sear the chicken breasts for about 6-7 minutes on each side until golden brown. Remove from the skillet and set aside.

    Sautéing Aromatics: In the same skillet, add the chopped onion and sauté until translucent, about 4-5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

      Building the Sauce: Pour in the canned diced tomatoes (with their juices) and chicken broth. Scrape the bottom of the skillet to deglaze and incorporate any flavorful bits. Stir in the heavy cream, dried oregano, and red pepper flakes, if using.

        Cooking the Rice: Add the jasmine rice to the skillet, stirring to combine. Place the seared chicken breasts on top of the rice mixture. Bring to a low simmer, then cover and reduce the heat to low. Cook for about 18-20 minutes or until the rice is tender and has absorbed the liquid.
