Creamy Tomato Basil Soup

1 medium onion, finely chopped

3 cloves garlic, minced

2 cans (14 oz each) diced tomatoes (preferably fire-roasted for added flavor)

2 cups vegetable broth (or chicken broth)

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

1 teaspoon dried oregano

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup fresh basil leaves, roughly chopped

Optional: Grated Parmesan cheese for serving

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 5-7 minutes, or until the onion is translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Tomatoes and Broth: Pour in the diced tomatoes (with their juices) and the vegetable broth. Stir in the sugar, salt, pepper, and dried oregano. Bring the mixture to a gentle simmer.

      Simmer: Allow the soup to simmer for about 20 minutes, uncovered, to let the flavors meld together. You can stir occasionally to prevent sticking.

        Blend the Soup: Remove the pot from heat. Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, you can transfer the soup to a regular blender in batches. Just be sure to allow some steam to escape to prevent splattering.
