Creamy Tomato Basil Soup with Grilled Cheese

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 (14-ounce) cans diced tomatoes, with their juice

2 cups vegetable broth

1 teaspoon sugar

1 teaspoon dried basil

½ teaspoon salt

¼ teaspoon black pepper

1 cup heavy cream

½ cup fresh basil leaves, torn

Grated Parmesan cheese (for garnish)

For Grilled Cheese:

8 slices of sourdough bread

4 tablespoons butter (softened)

8 slices sharp cheddar cheese

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Tomatoes and Broth: Pour in the diced tomatoes (with juice) and vegetable broth. Stir in the sugar, dried basil, salt, and black pepper. Bring to a simmer and let it cook uncovered for about 20 minutes, stirring occasionally.

      Blend the Soup: Remove the pot from heat and use an immersion blender to puree the soup until smooth. (Alternatively, you can carefully transfer the soup in batches to a blender).

        Incorporate Cream: Return the pot to low heat, and stir in the heavy cream. Let it warm through, then add the torn fresh basil leaves, stirring to combine.

          Make Grilled Cheese: While the soup warms, spread butter on one side of each slice of sourdough. Place four slices (butter-side down) in a skillet over medium heat. Layer two slices of cheddar cheese on each, then cover with the remaining bread slices (butter-side up). Grill until the bread is golden brown and the cheese has melted, about 3-4 minutes per side. Remove from the skillet and cut diagonally.
