Creamy Tuna Spinach Casserole

2 cans (5 oz each) tuna in olive oil, drained and flaked

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

2 cups cooked pasta (penne or rotini work best)

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1 cup cream of mushroom soup

1/2 cup sour cream

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon paprika

1 tablespoon olive oil

1/4 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté Spinach: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped fresh spinach (if using frozen, ensure it’s well-drained). Sauté for about 2-3 minutes until wilted. Remove from heat.

        Mix Ingredients: In a large mixing bowl, combine the drained tuna, cooked pasta, sautéed spinach, halved cherry tomatoes, half of the cheddar cheese, cream of mushroom soup, sour cream, garlic powder, onion powder, black pepper, salt, and paprika. Stir well until everything is evenly coated.

          Assemble the Casserole: Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly.

            Add Cheese and Breadcrumbs: Sprinkle the remaining cheddar cheese and grated Parmesan cheese on top. If desired, add breadcrumbs for an extra crunch.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the casserole is bubbly and the top is golden brown.

                Garnish and Serve: Once finished, take the casserole out and let it cool for a few minutes. Garnish with chopped parsley if desired. Serve warm and enjoy!
