Ingredients
  

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon Italian seasoning

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Dijon mustard

½ teaspoon red pepper flakes (optional)

Fresh basil, for garnish

Prepare the Chicken: Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Garlic and Tomatoes: In the same skillet, add the minced garlic and halved cherry tomatoes. Sauté for about 2-3 minutes until the tomatoes begin to soften and release their juices.

        Make the Cream Sauce: Reduce the heat to medium-low. Add the spinach leaves to the skillet and cook until wilted. Then pour in the heavy cream, followed by the grated Parmesan cheese and Dijon mustard. Stir until the cheese is melted and the sauce is well combined. If you like some heat, add red pepper flakes as well.

          Combine Chicken with Sauce: Return the cooked chicken breasts to the skillet. Spoon the creamy sauce over the chicken, allowing it to simmer for about 3-5 minutes to heat the chicken through and let the flavors meld.
