Ingredients

4 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh baby spinach

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Instructions

Prepare the Chicken: Season both sides of the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.

Sear the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for about 6-7 minutes on each side or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and cook until fragrant (about 30 seconds). Then, add the cherry tomatoes and cook until they start to soften, about 2-3 minutes.

Make the Cream Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Bring to a gentle simmer, then add the grated Parmesan cheese, stirring until melted and the sauce is creamy.

Add Spinach: Stir in the fresh spinach and balsamic vinegar until the spinach has wilted and the sauce is well-coordinated.

Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet, spooning the creamy sauce over each piece. Let it simmer for another 3-4 minutes to heat the chicken through and allow the flavors to meld.

Serve: Garnish with fresh basil leaves and serve immediately, either on its own or with pasta, rice, or crusty bread to soak up the delicious sauce.
