Creamy Tuscan White Bean Pasta

1 can (15 oz) white beans (cannellini or great northern), drained and rinsed

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

2 cups spinach (fresh, packed)

1 cup vegetable broth

1 cup coconut cream (or heavy cream for non-vegan option)

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a separate large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent. Then, add minced garlic and red pepper flakes, cooking for an additional minute until fragrant.
