2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Juice of 1 lemon

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon olive oil

1 tablespoon lemon juice

Salt to taste

For the Bowls:

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 cup baby spinach or mixed greens

1/4 red onion, thinly sliced

Fresh herbs for garnish (parsley or dill)

Marinate the Chicken: In a bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, pepper, and lemon juice. Add the chicken thighs and coat well. Let marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).
