Creamy White Bean and Spinach Soup

2 cans (15 ounces each) white beans (cannellini or navy beans), rinsed and drained

4 cups vegetable broth

2 cups fresh spinach, roughly chopped

1 medium onion, diced

3 cloves garlic, minced

1 medium carrot, diced

1 celery stalk, diced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup heavy cream (or coconut milk for a dairy-free option)

2 tablespoons olive oil

Salt and pepper to taste

Fresh lemon juice (from half a lemon, to taste)

Optional garnish: fresh parsley, croutons, or grated Parmesan cheese

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are soft and the onion becomes translucent.

    Add Garlic and Spices: Stir in the minced garlic, dried thyme, and oregano. Cook for an additional minute until fragrant.

      Combine Beans and Broth: Add the rinsed white beans and vegetable broth to the pot. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 15 minutes to allow the flavors to meld.

        Blend the Soup: Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, transfer half of the soup to a blender, blend until smooth, and return it to the pot.

          Stir in Cream and Spinach: Add the heavy cream (or coconut milk) and chopped spinach to the blended soup. Stir well and allow it to simmer for another 5 minutes, or until the spinach has wilted and the soup is heated through.

            Season and Serve: Season the soup with salt, pepper, and a splash of fresh lemon juice to brighten the flavors. Taste and adjust the seasoning as necessary.
