4 medium-sized russet potatoes

2 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon black pepper

Optional: fresh herbs (like rosemary or parsley) for garnish

Prep the Potatoes: Wash and scrub the russet potatoes thoroughly under running water. Pat them dry with a clean towel.

    Slice the Potatoes: Using a mandoline slicer or a sharp knife, cut the potatoes into thin slices (about 1/8 inch thick). Try to keep the slices uniform for even cooking.

      Soak the Slices: Place the potato slices in a large bowl of cold water and soak them for at least 30 minutes. This step helps to remove excess starch and allows for crispier chips.

        Dry the Slices: After soaking, drain the potatoes and pat them dry completely with a clean kitchen towel or paper towels. Removing moisture is key for crispiness.

          Season the Slices: In a large mixing bowl, combine the dried potato slices, olive oil, sea salt, smoked paprika, garlic powder, onion powder, and black pepper. Toss well to ensure all slices are evenly coated.

            Preheat the Air Fryer: Preheat your air fryer to 380°F (190°C) for about 3-5 minutes.

              Arrange in Air Fryer: Place the potato slices in the air fryer basket in a single layer, making sure they are not overcrowded. Depending on your air fryer size, you may need to do this in batches.

                Air Fry: Cook the potato slices for 10-12 minutes, shaking the basket halfway through the cooking time. Keep an eye on them towards the end to prevent burning. They should be golden and crispy.
