2 medium zucchinis, sliced into sticks

1/2 cup all-purpose flour (or gluten-free flour)

2 large eggs

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper, to taste

Cooking spray or olive oil for spritzing

Prep the Zucchini: Start by washing and drying the zucchinis. Cut off the ends and then slice them into sticks, about 1/4 inch thick.

    Set Up Breading Stations: In three shallow bowls, set up your breading station.

      - In the first bowl, place the flour, seasoned with salt and pepper.

        - In the second bowl, beat the eggs until well combined.

          - In the third bowl, mix the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, paprika, and a pinch of salt and pepper.

            Coat the Zucchini: Taking each zucchini stick, first coat it in the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, then roll it in the seasoned panko mixture until fully coated. Repeat this for all zucchini sticks.

              Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5-7 minutes.

                Air Fry the Zucchini: Lightly spray the air fryer basket with oil to prevent sticking. Place the zucchini sticks in a single layer in the basket, making sure not to overcrowd. You may need to cook in batches.

                  Cooking Time: Air fry the zucchini for about 10-12 minutes, flipping halfway through, until they are golden brown and crispy. Add more cooking time if necessary, keeping an eye on them to prevent burning.

                    Serve: Once crispy, remove from the air fryer and let cool for a minute. Serve immediately with your favorite dipping sauce, such as Marinara, Ranch, or a Spicy Aioli.
