2 medium zucchinis

1 cup breadcrumbs (panko for extra crispiness)

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

2 large eggs

Instructions
 

Prep the Zucchini: Wash and dry the zucchinis. Cut off the ends and slice them into thin rounds (about 1/4 inch thick) to ensure even cooking. Pat the slices dry with a paper towel to remove excess moisture.

    Prepare the Coating: In a shallow bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.

      Egg Wash: In another bowl, beat the eggs until well combined. This will help the breadcrumb mixture adhere to the zucchini slices.

        Coat the Zucchini: Dip each zucchini slice into the egg wash, letting any excess drip off, then coat thoroughly in the breadcrumb mixture. Press lightly to ensure the crumbs stick well to the zucchini.

          Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

            Arrange in Air Fryer: Spray the air fryer basket with olive oil spray to prevent sticking. Place the breaded zucchini chips in a single layer, making sure they don’t overlap. You may need to do this in batches depending on the size of your air fryer.

              Air Fry the Chips: Spray the tops of the zucchini chips lightly with olive oil spray. Cook at 400°F (200°C) for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.

                Cool and Serve: Once cooked, remove the zucchini chips from the air fryer and let them cool slightly. They will continue to crisp up as they cool. Serve immediately with your favorite dipping sauce, such as marinara or tzatziki.
