Crispy Baked Avocado Fries

2 ripe avocados

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper, to taste

Cooking spray or olive oil, for greasing

Fresh cilantro or lime wedges, for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray or brush with olive oil.

    Prepare Avocados: Cut the avocados in half, remove the pit, and carefully scoop the flesh out. Cut each half into wedges or strips, depending on your preference. Set aside.

      Set Up Breading Station: In three separate shallow bowls, place the flour in the first bowl, whisk the eggs in the second bowl, and combine the panko breadcrumbs, garlic powder, smoked paprika, cayenne pepper, salt, and pepper in the third bowl.

        Coat Avocado Wedges: Take each avocado wedge and first dip it into the flour, shaking off any excess. Next, dip it into the beaten eggs, ensuring it’s fully coated. Finally, roll the wedge in the seasoned panko breadcrumbs until well coated. Place the breaded avocado on the prepared baking sheet. Repeat for all wedges.

          Bake: Once all avocado wedges are breaded and on the baking sheet, lightly spray the tops with cooking spray or drizzle with olive oil. Bake in the preheated oven for about 15-20 minutes, or until the fries are golden brown and crispy.
