Ingredients

For the Chicken Tenders:

1 lb (450g) boneless, skinless chicken breasts, cut into strips

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs

Salt and pepper, to taste

Cooking spray or olive oil, for drizzling

For the Zesty Dipping Sauce:

½ cup plain Greek yogurt

¼ cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon honey

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper, to taste

Instructions

Marinate the Chicken: In a bowl, combine the chicken strips with buttermilk, ensuring they're completely coated. Cover and refrigerate for at least 30 minutes, or overnight if possible. This helps tenderize the meat and enhances flavor.

Prepare the Coating: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top of it. This allows the air to circulate around the chicken while it bakes, ensuring maximum crispiness.

Mix the Dry Ingredients: In one bowl, mix the all-purpose flour with garlic powder, onion powder, smoked paprika, Italian herbs, salt, and pepper. In a separate bowl, place the panko breadcrumbs.

Coat the Chicken: After marinating, remove the chicken from the buttermilk. Dredge each strip first in the flour mixture, shaking off any excess, then dip it back into the buttermilk, and finally coat it thoroughly with the panko breadcrumbs. This triple-dipping method ensures a crunchy exterior.

Bake the Chicken: Place the coated chicken tenders on the wire rack and lightly spray or drizzle them with cooking spray or olive oil. Bake in the preheated oven for 18-20 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Make the Dipping Sauce: While the chicken is baking, in a small bowl, whisk together Greek yogurt, mayonnaise, Dijon mustard, honey, lemon juice, garlic powder, salt, and pepper. Adjust seasoning to taste. Chill in the refrigerator until ready to serve.

Serve: Once the chicken tenders are baked to perfection, remove them from the oven and let them cool slightly. Serve warm with the zesty dipping sauce on the side.
