Before diving into the delightful process of making crispy baked fish nuggets, it’s crucial to preheat your oven to 425°F (220°C). This temperature is key for achieving that golden-brown, crispy exterior while keeping the fish moist and tender on the inside. A properly preheated oven ensures even cooking throughout the baking process, so don’t skip this important step.

Ingredients

1 lb firm white fish fillets (like cod, haddock, or tilapia)

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, finely chopped (optional)

Cooking spray or olive oil spray

Instructions

Preheat Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to prevent sticking.

Prepare Fish: Rinse the fish fillets under cold water and pat them dry with paper towels. Cut into bite-sized nuggets (about 1-2 inches in size).

Set Up Breading Station: In three separate shallow bowls, place the flour, whisked eggs, and panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, pepper, and parsley (if using).

Bread the Fish: First, dredge each fish nugget in the flour, shaking off any excess. Next, dip them in the beaten eggs, allowing any excess to drip off, then coat the nuggets in the panko breadcrumb mixture, pressing lightly to ensure they stick well.

Arrange on Baking Sheet: Place the coated fish nuggets on the prepared baking sheet in a single layer, ensuring they are not touching. Spray the tops lightly with cooking spray or olive oil for an extra crispy texture.

Bake: Bake the nuggets in the preheated oven for 12-15 minutes, flip them halfway through the cooking time to ensure even crispiness. They are ready when they are golden brown and cooked through.

Serve: Remove from the oven and let them rest for a few minutes. Serve them hot with your favorite dipping sauce, like tartar sauce, cocktail sauce, or a zesty lemon aioli.
