Crispy BBQ Cauliflower Bites

¾ cup unsweetened almond milk (or your choice of milk)

1 cup panko breadcrumbs (for added crispiness)

½ cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

Preheat your oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the cauliflower: In a large mixing bowl, add the cauliflower florets. Make sure they are nicely trimmed and roughly the same size for even cooking.

      Make the batter: In a separate bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk together until well blended. Gradually add the almond milk to the dry ingredients, mixing until you have a smooth, thick batter.

        Coat the florets: Dip each cauliflower floret into the batter, allowing the excess to drip off. Then roll it in the panko breadcrumbs until fully coated. Place the coated florets on the prepared baking sheet, ensuring they are spaced apart for even crispiness.

          Bake to perfection: Drizzle the olive oil lightly over the coated cauliflower bites. Bake in the preheated oven for about 25-30 minutes, or until they’re golden brown and crispy. Flip the bites halfway through baking to ensure they crisp evenly.
