1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (can substitute with almond flour for gluten-free)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 cup buttermilk (or a vegan alternative)

1 cup panko breadcrumbs

1 cup BBQ sauce (your favorite brand or homemade)

2 tbsp olive oil (for drizzling)

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: Rinse the cauliflower florets and pat them dry with a kitchen towel. Make sure they are thoroughly dry to ensure maximum crispiness.

      Make the Batter: In a mixing bowl, combine the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Slowly whisk in the buttermilk until a smooth batter forms.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Then roll them in the panko breadcrumbs, pressing gently to ensure the crumbs stick well.

          Arrange on Baking Sheet: Place the coated cauliflower bites in a single layer on the prepared baking sheet. Drizzle them with olive oil for extra crispiness.

            Bake: Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is golden brown and crispy.

              Add BBQ Sauce: Remove the cauliflower bites from the oven and transfer them to a large bowl. Pour the BBQ sauce over the hot bites and gently toss until they are completely coated.
