1/4 cup unsalted butter or vegan alternative, melted

1 tbsp maple syrup (optional, for sweetness)

2 cups cooked quinoa or brown rice

1 cup shredded lettuce (romaine or iceberg)

1/2 cup diced tomatoes

1/4 cup sliced green onions
