2 large chicken breasts, boneless and skinless

1 cup seasoned breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Salt and pepper, to taste

4 large flour tortillas

1 cup romaine lettuce, chopped

1/2 cup Caesar dressing

1/2 cup grated Parmesan cheese

1/4 cup cherry tomatoes, halved (optional)

Freshly ground black pepper, to taste

Olive oil spray (or oil for frying)

Instructions
 

Prepare the Chicken: Start by seasoning the chicken breasts with salt and pepper. Set up a breading station by placing the flour in one bowl, beaten eggs in a second bowl, and breadcrumbs in a third bowl.

    Bread the Chicken: Dredge each chicken breast in flour, shaking off excess, then dip into the beaten eggs, and finally coat with breadcrumbs evenly.

      Cook the Chicken: Preheat your oven to 400°F (200°C). Place the breaded chicken on a baking sheet lined with parchment paper. Spray lightly with olive oil, then bake for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C). Alternatively, you can pan-fry them in oil, cooking on medium heat for about 6-7 minutes on each side until crispy and cooked through.

        Prepare the Wraps: While the chicken is cooking, mix the chopped romaine, Caesar dressing, Parmesan cheese, and cherry tomatoes (if using) in a large bowl. Toss until the lettuce is well-coated.

          Assemble the Wraps: Once the chicken is done, allow it to cool slightly, then slice it into strips. Place a tortilla on a clean surface, add a portion of the Caesar salad mixture in the center, and top with sliced crispy chicken.

            Wrap it Up: Fold the sides of the tortilla over the filling, then roll from the bottom up to create a tightly wrapped burrito-style wrap. Repeat for the remaining tortillas and filling.
