1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

½ teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

1 cup marinara sauce (for serving)

Fresh basil leaves (for garnish)

Olive oil (for frying)

Instructions
 

Preparation: Start by setting up a breading station. Prepare three bowls: one with flour, one with beaten eggs, and a third for the panko breadcrumbs mixed with Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.

    Coat Chicken: Take a piece of chicken and coat it in flour, shaking off excess. Next, dip it into the egg, ensuring it’s fully coated. Finally, roll it in the panko mixture, pressing gently to adhere the crumbs. Repeat this for all chicken pieces.

      Heat Oil: In a large skillet, pour enough olive oil to cover the bottom (about ¼ inch deep) and heat over medium-high heat until shimmering but not smoking.

        Fry Chicken: Once the oil is hot, carefully add the chicken bites in batches, being sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Use a slotted spoon to transfer the cooked pieces to a plate lined with paper towels to drain excess oil.

          Serve: Arrange the crispy chicken bites on a serving platter. Serve with warm marinara sauce for dipping and garnish with fresh basil leaves for a burst of color and flavor.
