2 cups cooked chicken, shredded

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1/2 cup diced bell peppers (red, green, or yellow)

1/4 cup diced red onion

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

4 tablespoons olive oil, divided

1/4 cup fresh cilantro, chopped (optional, for garnish)

Sour cream and salsa for serving

Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, bell peppers, red onion, garlic powder, chili powder, cumin, salt, and pepper. Mix well until all ingredients are evenly coated.

    Assemble the Quesadillas: Place a large skillet over medium heat and add 1 tablespoon of olive oil. Lay one flour tortilla flat in the skillet. Spread 1/4 of the chicken mixture over half of the tortilla. Fold the tortilla in half, covering the filling.

      Cook the Quesadilla: Cook for about 3-4 minutes, or until the bottom is golden brown and crispy. Carefully flip it over and add another tablespoon of olive oil to the skillet if needed. Cook for an additional 3-4 minutes until the other side is also golden brown and the cheese is melted. Repeat this process with the remaining tortillas and filling.

        Cut into Wedges: Once all your quesadillas are cooked, remove them from the skillet and let them cool for a minute. Using a sharp knife or pizza cutter, slice each quesadilla into wedges.
