Crispy Chickpea Greek Salad Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

4 large whole wheat or gluten-free wraps

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

1 bell pepper (any color), diced

½ cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled (or vegan feta)

½ cup fresh parsley, chopped

¼ cup fresh lemon juice

½ teaspoon dried oregano

Crispy Chickpeas: Preheat your oven to 400°F (200°C). In a mixing bowl, combine the drained chickpeas with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until the chickpeas are evenly coated. Spread them out on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes until they are golden brown and crispy, shaking the pan halfway through.

    Prepare Salad: While the chickpeas roast, in a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, Kalamata olives, feta cheese, and parsley.

      Dress the Salad: In a small bowl, whisk together the lemon juice, dried oregano, and a pinch of salt and pepper. Pour the dressing over the salad mixture and gently toss until everything is evenly coated.
