Crispy Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

1 cup lettuce, shredded (romaine or mixed greens)

1 medium tomato, diced

1/2 red onion, thinly sliced

1 avocado, sliced

4 whole wheat tortillas

1/2 cup hummus (store-bought or homemade)

Optional: hot sauce or tzatziki for extra flavor

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: Spread the rinsed chickpeas onto a clean kitchen towel and pat them dry to remove excess moisture. This will help them crisp up in the oven.

      Season the Chickpeas: In a mixing bowl, combine the dry chickpeas with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until evenly coated.

        Bake the Chickpeas: Spread the seasoned chickpeas on a baking sheet in a single layer. Bake for 25-30 minutes, stirring halfway through, until they are golden brown and crispy. Keep an eye on them to ensure they don’t burn.

          Assemble the Wraps: While the chickpeas are baking, prepare your wrap fillings. In a separate bowl, mix the shredded lettuce, diced tomato, and sliced red onion.

            Spread the Hummus: Take each tortilla and spread a generous layer of hummus across the center.

              Add the Fillings: On top of the hummus, add the mixed veggies, followed by the crispy chickpeas and avocado slices. Drizzle with optional hot sauce or tzatziki if desired.

                Wrap It Up: Fold in the sides of the tortilla, then roll it from the bottom to the top to enclose all the fillings. Be sure to wrap it tightly to keep everything together.

                  Serve: Slice the wraps in half on a diagonal and serve immediately while the chickpeas are still crispy!
