Ingredients

2 pounds chicken wings

1 tablespoon baking powder

1 tablespoon cornstarch

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried oregano

1 teaspoon dried thyme

1 tablespoon olive oil

Optional: fresh parsley or cilantro for garnish

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire rack on top to catch drippings and promote airflow.

Prepare the Chicken Wings: Pat the chicken wings dry with paper towels to remove moisture. This step is crucial for achieving ultimate crispiness.

Make the Dry Rub: In a large bowl, combine baking powder, cornstarch, salt, black pepper, garlic powder, onion powder, smoked paprika, cayenne pepper, oregano, and thyme. Mix well to ensure all spices are evenly distributed.

Coat the Wings: Add olive oil to the chicken wings and toss to coat evenly. Sprinkle the dry rub mixture over the wings and toss until they're fully coated. Make sure each wing is adequately covered for maximum flavor.

Arrange on the Rack: Place the coated wings in a single layer on the prepared wire rack. This ensures they cook evenly and become crispy all around.

Bake: Bake the wings in the preheated oven for 40-45 minutes or until they are golden brown and crispy, flipping them halfway through for even cooking.

Serve: Once done, remove the wings from the oven and let them rest for a few minutes. If desired, garnish with fresh parsley or cilantro.

Enjoy: Serve your crispy dry rub chicken wings with your favorite dipping sauce, like ranch, blue cheese, or a spicy aioli. Enjoy the zesty kick!
