100g feta cheese, crumbled

1 medium tomato, diced

1 cup fresh spinach, roughly chopped

1/4 cup bell pepper, diced (any color)

1 tablespoon olive oil

Salt and pepper, to taste

4 large whole wheat tortillas

Prep the Ingredients: Start by preparing your vegetables. Dice the tomato and bell pepper, and chop the spinach. Set them aside.

    Crisp the Feta: In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the crumbled feta cheese to the skillet in an even layer. Cook for about 3-4 minutes until the feta is golden and crispy. Carefully flip with a spatula and cook for another 1-2 minutes. Remove from the pan and set aside.

      Whisk the Eggs: In a mixing bowl, whisk together the eggs, and season them with salt and pepper.

        Cook the Eggs: In the same skillet, pour in the whisked eggs and let them sit for about 30 seconds. Gently stir with a spatula, allowing the uncooked egg to flow to the edges of the pan.
