Crispy Parmesan Crusted Pork Chops

4 bone-in pork chops (about 1-inch thick)

1 cup grated Parmesan cheese

1 cup seasoned breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon black pepper

1 teaspoon salt

2 large eggs

½ cup all-purpose flour

½ cup buttermilk (optional for marinating)

3 tablespoons olive oil (or more, as needed)

Prep the Pork Chops: If desired, marinate the pork chops in buttermilk for 2 hours to tenderize and add moisture. If you're short on time, you can skip this step.

    Preheat Oven: Preheat your oven to 400°F (200°C) while you prepare the pork chops.

      Prepare Breading Station: Set up three shallow dishes. In the first dish, place the flour. In the second dish, whisk the eggs until smooth. In the third dish, combine the grated Parmesan cheese, seasoned breadcrumbs, garlic powder, onion powder, paprika, black pepper, and salt.

        Bread the Pork Chops: Remove the pork chops from the buttermilk if you used it, shaking off any excess. Dredge each chop first in flour, shaking off the excess. Then dip into the beaten eggs, allowing any excess to drip off. Lastly, coat generously with the Parmesan-breadcrumb mixture, pressing gently to adhere.

          Sear the Chops: In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, carefully add the breaded pork chops (you may need to do this in batches). Sear them for about 3-4 minutes on each side until they are golden brown.

            Bake the Chops: After searing, transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C). The crust should be crispy and golden.

              Rest and Serve: Remove the skillet from the oven and let the pork chops rest for 5 minutes before serving. This allows the juices to redistribute.
