2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko works best for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash the zucchinis thoroughly and slice them into thin rounds, about ¼ inch thick. Pat the slices dry with paper towels to remove excess moisture.

      Make the Egg Wash: In a shallow bowl, whisk together the eggs and 1 tablespoon of olive oil until well combined.

        Prepare the Coating: In a separate bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
