Crispy Shrimp Balls with Sweet Chili Sauce

For the Shrimp Balls:

1 pound raw shrimp, peeled and deveined

1/2 cup breadcrumbs (preferably panko)

1/4 cup green onions, finely chopped

1/4 cup cilantro, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 teaspoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, lightly beaten

Vegetable oil, for frying

For the Sweet Chili Sauce:

1/2 cup sweet chili sauce

1 tablespoon lime juice

1 teaspoon fish sauce

1 teaspoon sriracha (optional, for heat)

Sesame seeds, for garnish

Prepare the Shrimp Mixture: In a food processor, combine the raw shrimp, breadcrumbs, green onions, cilantro, garlic, ginger, soy sauce, sesame oil, salt, pepper, and the beaten egg. Pulse until the mixture is smooth but still has some texture.

    Shape the Balls: Wet your hands slightly to prevent sticking. Take a tablespoon of the shrimp mixture and form it into a ball, about the size of a ping pong ball. Repeat until all the mixture is shaped.

      Heat the Oil: In a deep skillet or frying pan, pour in enough vegetable oil to submerge the shrimp balls about halfway. Heat the oil over medium-high heat until it reaches around 350°F (175°C). You can test if the oil is hot enough by dropping a small piece of the mixture into it; it should sizzle immediately.

        Fry the Shrimp Balls: Carefully place the shrimp balls into the hot oil in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the shrimp balls and place them on a paper towel-lined plate to drain excess oil.

          Make the Sweet Chili Sauce: In a small bowl, combine the sweet chili sauce, lime juice, fish sauce, and sriracha (if using). Mix well and set aside.

            Serve: Arrange the crispy shrimp balls on a serving platter. Drizzle some of the sweet chili sauce on top and garnish with sesame seeds. Serve the remaining sauce on the side for dipping.
