14 oz firm tofu, pressed and cubed

1 cup broccoli florets

1 bell pepper (red or yellow), sliced

1 medium carrot, julienned

1 cup sugar snap peas

3 cloves garlic, minced

1 inch piece fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil (for frying)

1 tablespoon cornstarch

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup (for vegan)

1 teaspoon sriracha (optional for heat)

Sesame seeds (for garnish)

Green onions, sliced (for garnish)

Instructions
 

Prepare Tofu: Begin by pressing the tofu for at least 30 minutes to remove excess moisture. After pressing, cut the tofu into 1-inch cubes. Toss the cubes in a bowl with the cornstarch until evenly coated.

    Fry Tofu: In a large skillet or wok, heat the olive oil over medium-high heat. Add the coated tofu cubes and cook until each side is golden and crispy, about 3-4 minutes per side. Once cooked, remove the tofu from the pan and set it aside on a plate.

      Sauté Vegetables: In the same skillet, add a bit more olive oil if necessary and toss in the minced garlic and grated ginger. Sauté for 30 seconds until fragrant, then add the broccoli, bell pepper, carrot, and sugar snap peas. Stir-fry the vegetables for about 5-7 minutes, or until they are tender yet still crisp.

        Make Sauce: In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple syrup), and sriracha until combined.

          Combine Everything: Once the vegetables are cooked, return the crispy tofu to the skillet. Pour the sauce over the tofu and vegetables, stirring well to coat everything evenly. Cook for an additional 2-3 minutes to let the flavors meld.
