Crockpot Beef and Noodles

2 lbs beef chuck roast

1 medium onion, diced

3 cloves garlic, minced

4 cups beef broth

1 tablespoon Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

3 cups egg noodles

1 cup frozen peas

1 cup heavy cream (optional for creaminess)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Beef: Season the beef chuck roast liberally with salt and pepper.

    Sauté Aromatics: In a skillet over medium heat, add a little oil and sauté the diced onion until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.

      Combine Ingredients in Crockpot: Place the beef roast in the crockpot. Add the sautéed onions and garlic on top of the roast. Pour in the beef broth, Worcestershire sauce, thyme, rosemary, and paprika. Make sure the liquid covers most of the beef.

        Cook the Beef: Cover and cook on low for 8 hours or high for 4-5 hours, until the beef is tender and falling apart.

          Shred the Beef: Once cooked, carefully remove the beef from the crockpot and shred it with two forks. Return the shredded beef to the crockpot.

            Add Noodles: Stir in the egg noodles and frozen peas. If using, add the heavy cream for a richer sauce and mix until everything is combined.

              Final Cooking: Cover and cook on high for an additional 30-40 minutes or until the noodles are tender, stirring occasionally to prevent sticking.

                Serve: Ladle the beef and noodles into bowls, garnish with fresh chopped parsley, and enjoy!
