Crockpot Cajun Chicken and Wild Rice

1.5 lbs boneless, skinless chicken thighs

1 cup wild rice mix (preferably with seasoning)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 teaspoon Cajun seasoning (adjust based on heat preference)

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional)

4 cups chicken broth

1 can (15 oz) diced tomatoes, undrained

1 cup frozen corn

1 cup sliced okra (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Ingredients: Start by dicing the onion and chopping the bell peppers. Mince the garlic and set everything aside.

    Layer the Crockpot: Add the wild rice to the bottom of the crockpot, spread it out evenly.

      Add the Chicken: Place the chicken thighs on top of the wild rice.

        Seasoning: In a small bowl, mix together the Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper. Sprinkle this mixture over the chicken thighs to evenly coat them.

          Add the Veggies: Layer the diced onion, minced garlic, chopped bell peppers, and frozen corn over the chicken. If using okra, add that too.
