3 lbs russet potatoes, thinly sliced

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup heavy cream

1 cup whole milk

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and black pepper to taste

2 tablespoons unsalted butter, cut into small pieces

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Peel and slice the russet potatoes into thin rounds using a mandoline or a sharp knife. Rinse them in cold water and pat them dry with a clean kitchen towel.

    Make the Creamy Sauce: In a medium bowl, whisk together the heavy cream, whole milk, minced garlic, thyme, paprika, and a generous pinch of salt and black pepper.

      Layer in the Crockpot: Grease the inside of your crockpot with a bit of butter or cooking spray. Start by placing a single layer of sliced potatoes on the bottom. Sprinkle a portion of the chopped onion and a handful of the cheddar and mozzarella cheese. Pour a portion of the creamy sauce over the top.
