Crockpot Chicken Corn Chowder

1 lb boneless, skinless chicken breasts (or thighs)

4 cups fresh or frozen corn kernels

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, diced (Yukon Gold or russet)

1 red bell pepper, diced

2 cups low-sodium chicken broth

1 cup heavy cream (or coconut cream for a dairy-free option)

1 tsp dried thyme

1 tsp paprika

½ tsp salt (or to taste)

¼ tsp black pepper

1 cup shredded cheddar cheese (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Ingredients: Begin by dicing the onion, garlic, potatoes, and red bell pepper. If you are using fresh corn, remove the kernels from the cobs.

    Layer the Ingredients in the Crockpot: Place the chicken breasts at the bottom of the crockpot. Layer on the corn, diced potatoes, onion, garlic, and red bell pepper.

      Add the Broth and Spices: Pour in the chicken broth, and then sprinkle with thyme, paprika, salt, and black pepper. Stir gently to combine and ensure that the spices are evenly distributed.
