2 cups vegetable broth

1 cup heavy cream (or coconut cream for dairy-free)

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 bell pepper (any color), diced

1 cup fresh spinach, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp Italian seasoning

½ tsp salt (adjust to taste)

¼ tsp black pepper (adjust to taste)

½ cup grated Parmesan cheese (or nutritional yeast for dairy-free)

Fresh basil leaves for garnish (optional)

Prepare the Base: In your crockpot, combine the vegetable broth, heavy cream, chopped onion, minced garlic, Italian seasoning, salt, and black pepper. Whisk together until well mixed.
