Crockpot Hatch Chili Chicken Bowls

2 lbs boneless, skinless chicken thighs

2 cups hatch green chiles (fresh or canned, diced)

1 onion, chopped

4 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup low-sodium chicken broth

2 tsp cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper, to taste

1 cup long-grain rice (uncooked)

1 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, for garnish

Lime wedges, for serving

Sour cream or Greek yogurt, for topping (optional)

Instructions
 

Prepare the Chicken: Place the chicken thighs in the bottom of the crockpot.
