1 pound cooked turkey, shredded or diced

1 cup wild rice, rinsed

4 cups low-sodium chicken broth

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

1 cup heavy cream or coconut milk (for a lighter version)

1 cup frozen peas

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Base: In a skillet over medium heat, add olive oil. Once hot, sauté the diced onion, carrots, and celery for 5-7 minutes or until they begin to soften. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
