1 can (15 oz) chickpeas, drained and rinsed

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 bell pepper (red or yellow), diced

1/2 cup Kalamata olives, pitted and halved

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

1/2 cup crispy pita chips or croutons for added crunch

Prepare the Chickpeas: In a large mixing bowl, add the drained and rinsed chickpeas. Gently mash about half of the chickpeas with a fork or potato masher to create a mix of textures.

    Chop and Combine: Add the diced cucumber, halved cherry tomatoes, chopped red onion, and diced bell pepper to the bowl with chickpeas. Follow with Kalamata olives and crumbled feta cheese.

      Make the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Mix and Marinate: Drizzle the dressing over the salad ingredients, then toss everything together until evenly coated. Let the salad sit for at least 15 minutes at room temperature to allow the flavors to meld.
