2 packages of instant ramen noodles (discard seasoning packets)

2 cups cooked chicken, shredded or diced (grilled or rotisserie works well)

1 cup shredded carrots

1 cup red cabbage, thinly sliced

1 cup sugar snap peas, trimmed and halved

1/2 cup green onions, sliced

1/2 cup roasted peanuts, chopped

1/4 cup fresh cilantro, chopped (optional)

For the Dressing:

1/4 cup soy sauce

3 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 tablespoon sriracha (optional, adjust to your heat preference)

Salt and pepper to taste

Prepare the Ramen Noodles: In a medium pot, bring water to a boil. Add the ramen noodles and cook for 3-4 minutes, or until slightly tender but still crunchy. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, sriracha (if using), and a pinch of salt and pepper until well combined.

      Combine the Salad Ingredients: In a large mixing bowl, combine the cooled ramen noodles, shredded chicken, carrots, red cabbage, sugar snap peas, green onions, and chopped peanuts. If using cilantro, add it at this step.
