1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon cumin

2 tablespoons ranch seasoning mix (store-bought or homemade)

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup shredded cheddar cheese (or dairy-free alternative)

¼ cup fresh cilantro, chopped

Prepare the Chickpeas: Preheat your oven to 400°F (200°C). In a medium bowl, toss the drained and rinsed chickpeas with olive oil, garlic powder, onion powder, paprika, cumin, salt, black pepper, and ranch seasoning until well coated.

    Roast the Chickpeas: Spread the seasoned chickpeas on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until they are golden brown and crunchy, shaking the pan halfway through to ensure even cooking.
